Yeast: Optimizing Spirits Production to Improve Quality, Efficiency and Profitability

Annick Mercier, Business Area Manager for Lallemand Biofuels & Distilled Spirits, described the products, support and education her team provides to distillers in the Caribbean and North American areas. Chief among these are optimizing production in the mash/cook phase, through and through yeast biology and nutrition.

Differentiating between ethanol yield from glucose in fermentation and recovery of ethanol via distillation, she provided a case study form Charleston Distilling agave fermentation that increased ethanol yields from 5-12%. She described the creation of both maltose and glucose from alpha amalyse enzymes, and warned that too much sugar puts osmotic stress on yeast.

Mercier discussed matching yeast strains to substrates including various grain stocks and molasses, optimal fermentation temperatures and yeast dosages. Nutrition and supplements such as nitrogen were evaluated for their contributions to optimization.
